Autumn Apple Pie Protein Bread Recipe

The other day I had a zillion apples begging to be used.

I thought at first to make some apple protein muffins, but, of course, the muffin pan was dirty.

So I thought, why not give apple protein bread a shot? I mixed it all together, popped it in the oven, and the result was nothing short of magical. A perfect blend of apples and cinnamon spice, this bread tastes amazing both toasted and chilled with some almond or other nut butter slathered on top.

Here’s the autumn apple pie protein bread recipe:

Ingredients

1 cup oats
1/2 cup vanilla whey protein powder
1 egg
1/2 cup low fat cottage cheese
1/4 cup unsweetened applesauce
1/4 cup almond milk
1 tsp cinnamon
1 tsp vanilla extract
1/2 tsp salt
1/2 tsp baking powder
1 medium apple, peeled and diced
2-3 dates, pitted

Total prep time: 10 minutes
Total bake time: 30-35 minutes

Directions

Heat your oven to 350° Fahrenheit. While the oven is getting warm, blend everything together except for the apples. Make sure to pit the dates first!

Add the apples and stir evenly throughout the mixture. Spray a 8×4″ pan with non-stick cooking oil, then pour the mixture into the pan. Stick it into the oven and bake for 30-35 minutes or until the top is slightly browned and a knife inserted near the center comes out clean.

Slice into eight pieces, then eat warmed up with some nut butter or Greek yogurt topping. The slices are also really good chilled! Store in the refrigerator.
