Cashew Cherry Crunch Energy Bars

In my mind one of the most decadent combinations ever is the mixture of cashews, dried cherries, and chocolate.

And that’s exactly what these energy bars are made of. Not only will they satisfy your sweet tooth, but the combination of healthy fats, protein, and lasting carbs will keep you full until your next meal.

Here’s your cashew cherry crunch energy bar recipe:

Ingredients

1/2 cup crisp rice or millet cereal
1/4 cup quick cooking rolled oats
1/4 cup vanilla whey protein powder
2 Tbsp almond butter
2 Tbsp unsweetened almond milk
2 Tbsp unsweetened dried cherries, coarsely chopped
2 Tbsp cashews, coarsely chopped
2 Tbsp dark chocolate chunks
1 Tbsp honey
1 tsp cinnamon
1/8 tsp fine sea salt

Directions

Stir the rice or millet cereal, oats, protein powder, cinnamon, and sea salt together in a medium sized bowl, then add in the almond butter, honey, and almond milk.

Make sure you mix everything together really well so you don’t end up biting into a bit of dry protein powder or oats when you’re eating your bars! Next, stir in the cashews, cherries, and chocolate until everything is spread out evenly.

Spray some parchment paper with a little coconut oil (or just spread some on there), and put your dough on there. Use the parchment paper to flatten the dough so that it’s in a fairly rectangular shape—remember, this will be the eventual thickness of your bars so don’t make it too thin or too thick.

Stick in the refrigerator for an hour or so, then cut into four evenly sized bars.

Eat up! Store in the fridge or freezer.
