Double Chocolate Coconut Energy Bar Recipe

Sometimes you just need a quick, super delicious homemade snack that you can make quickly with very few ingredients.

These double chocolate coconut energy bars are perfect for times like those—they not only taste amazing, they also pack plenty of healthy ingredients to keep you feeling full and energized for hours.

Make this recipe your go-to when you need something that is both tasty and healthy and doesn’t take much effort to make!

Here’s the double chocolate coconut energy bar recipe:

Ingredients

1 cup old fashioned oats
2/3 cup chocolate whey protein powder
1/4 cup almond milk (or milk of your choice)
1/4 cup unsweetened crunchy or smooth peanut butter
2 Tbsp unsweetened shredded coconut
2 Tbsp dark chocolate chips
1 Tbsp unsweetened cocoa powder
1 tsp vanilla extract

Total prep time: 15 minutes

Directions

Mix everything but the chocolate chips together in a medium sized bowl. Make sure to stir everything together really well! If the mixture feels a bit too dry (different protein powders soak up more liquid than others), just add a tiny bit more almond milk.

Once you’ve got the main ingredients mixed together, add the chocolate chips so they’re spread evenly throughout the dough. Line a 4×8 inch pan with parchment paper, spray with a little coconut oil, then spread the dough so that it’s pressed down evenly into the pan. Use your hands or a spatula to make sure the top is flat.

Then, place the mixture in the fridge for 1-2 hours or until chilled.

Once the bars are chilled, cut them into five pieces, wrap each individually in foil or plastic wrap, and eat up! Store any remaining bars in the fridge or freezer.
