Pea protein is one of the least well known protein powders, probably because, well it just sounds weird.
No one ever taught me when I was younger that peas had a lot of protein in them, but they do! And not only is pea protein vegan (and paleo, if that’s your thing), it’s absorbed really well by your body, making it a great alternative to whey.
And while I’ve admittedly never tried pea protein powder in a shake (yet), I love to bake with it, since it produces moist, delicious baked goods without any of the cake-y dryness that whey tends to make. And I promise it doesn’t taste anything like peas.
Try these banana vegan power cookies, they’re incredibly easy to make and are full of stellar ingredients:
1 medium ripe banana
1 scoop vegan pea protein powder (or vegan mix)
1 cup quick cooking oats
1/4 cup unsweetened almond milk
1 Tbsp + 1 tsp unsweetened shredded coconut
1 Tbsp unsweetened dried cherries (or other fruit), chopped
1 Tbsp chocolate chips
1 tsp cinnamon
1 tsp vanilla extract
Total prep time: 10 minutes
Total baking time: 20 minutes
Preheat your oven to 325° F. Add the banana, protein powder, and oats to a medium sized bowl and mash it all together. Slowly add the almond milk and stir until there are no remaining chunks.
Add the cinnamon and vanilla extract, and stir well. Next, stir in the 1 Tbsp shredded coconut, dried cherries, and chocolate chips and stir it all together.
Form into 6 cookies on a cookie sheet (I used a Silpat so it wouldn’t stick, but if you don’t have one make sure and spray the pan beforehand), then sprinkle the remaining 1 tsp shredded coconut evenly on top of the cookies. Bake for about 20 minutes or until slightly browned on top.
