Amazing Apple Cranberry Energy Bar Recipe

Get energized with this energy bar recipe packed with chunks of apples and dried cranberries!

It’s super easy to make and you can make it ahead of time for a quick, satisfying snack. It’s a great sweet tooth satisfier as well, and I’ve happily eaten it for dessert many times 🙂

Here’s your Amazing Apple Cranberry Energy Bar Recipe:

Ingredients

1 cup old fashioned oats
2/3 cup vanilla (or cinnamon) whey protein powder (1.5 servings)
1/4 cup almond milk (or milk of your choice)
1/4 cup unsweetened peanut butter or almond butter
2 Tbsp dried cranberries
2 Tbsp diced apple, peeled
1 tsp vanilla extract
1/2 tsp cinnamon

Directions

Stir together the oats, protein powder, cinnamon, and vanilla extract. Next, add in the peanut butter, and almond milk until you get a thick dough. Add the diced apple and cranberries, then spray some parchment paper with a little coconut oil (or just spread some on there), and put your dough on there.

Use the parchment paper to flatten the dough so that it’s in a fairly rectangular shape—remember, this will be the eventual thickness of your bars so don’t make it too thin/too thick.

Stick in the refrigerator for an hour or so. Cut into five bars, then eat up! Store in the fridge or freezer.
