Amazing Chocolate Covered Peanut Butter Protein Ball Recipe

Dark chocolate. Peanut butter. Protein. These are arguably some of my favorite things on earth—and these dark chocolate covered peanut butter protein balls have them all.

And not only are they incredibly easy to make, they’re full of protein and healthy fats, yet taste like something you’d buy from a gourmet chocolate shop. And what’s more, they’re insanely satisfying.

Plus, you can taylor this recipe to your liking—it’s already vegan, Paleo (ok, chocolate eating Paleo at least), low carb…. but if you prefer almond butter, cashew butter, or whatever, you can use that and it’ll still turn out amazing.

Here’s how to make them:

6 TB natural peanut butter (I use chunky, but if you prefer smooth, use that)
2 servings vanilla protein powder like this one (this equaled 4 scoops for me)
3-4 TB almond milk (any other kind of milk should work fine too)
60 grams dark chocolate, or about two thirds of a regular sized chocolate bar (85% or higher cacao is ideal)

Add peanut butter and protein powder to a medium sized bowl (if you want to make the stirring a little easier, melt the peanut butter in the microwave for 10-15 seconds beforehand). Add two tablespoons of almond milk, stir, and add an additional one or two tablespoons until everything is mixed together.

The mixture should be very sticky, but not liquidy at all.

Using a spoon and your hands, form 1-2 inch balls out of the mixture and place them on wax paper to keep them from sticking. Cover and put in the refrigerator for at least 30 minutes.

Once the peanut butter balls are chilled, remove them from the refrigerator and melt your chocolate over a stovetop or using a microwave, being careful not to burn the chocolate.

While the chocolate is still melted, dip the peanut butter balls in the chocolate, covering them completely. Return the chocolate covered peanut butter protein balls to the wax paper, cover, and return to the fridge.

Let cool for 15-30 minutes, eat, and enjoy!

Makes about 12 small peanut butter protein balls.
