Apple Banana Chia Protein Muffin Recipe

Chunky apple muffins have always been one of my favorite treats.

Yet while seemingly healthy, the apple muffins you get at Costco or any regular store are often loaded with sugar and crazy amounts of butter and less-than-wholesome white flour. These chia protein muffins are a much healthier take on the classic apple muffin, with healthy additions like oats instead of regular flour, bananas for added moisture, and chia seeds for an omega-3 boost.

They’re perfect for breakfast or a snack anytime of the day!

Here’s your apple banana chia protein muffin recipe:


1 cup old fashioned oats
1/2 cup vanilla whey protein powder
1/2 cup unsweetened almond milk
2 Tbsp cottage cheese
2 tbsp chia seeds
1 tsp vanilla extract
1 tsp cinnamon
1 tsp baking powder
1/4 tsp salt
1 large ripe banana (about 3/4 cup)
1 egg
2-3 dates, pitted
1 medium apple, peeled & diced


Heat your oven to 350° Fahrenheit. While the oven is warming, blend everything together except for the apple using a blender or hand mixer until there are no remaining chunks.

Peel your apple, then dice it into small bite-sized pieces. Stir into the dough, then pour the mixture into eight baking cups (I prefer silicon ones since they’re reusable and don’t stick.

Put into the oven and bake for about 20 to 22 minutes, or until the muffins are slightly browned on top.

Eat warmed or chilled and slather with nut butter, Greek yogurt, or your favorite topping.

Store in the fridge!
