Protein balls are a really fun way to snack healthy while feeling like you’re eating a ball of cookie dough!
Plus they’re so simple to make that even the most unskilled cook can make them, really.
These banana coconut ones are high in potassium and healthy fats to keep you full and satisfied longer. And they’re chocolate so of course they also taste awesome 🙂
Here’s your banana coconut protein ball recipe:
1/4 cup almond meal
1 serving chocolate protein powder (about 1/3 cup)
1 mashed ripe banana
3 Tbsp cocoa powder
2 Tbsp unsweetened shredded coconut
1-2 Tbsp unsweetened almond milk (if needed)
1 Tbsp coconut oil, melted
1 Tbsp honey or agave
Mix together the almond meal, protein powder, and cocoa powder in a medium sized bowl. Add in the banana, melted coconut oil, and honey, then mash together. If the mixture just doesn’t seem to be mixing well (this varies depending on your protein powder), slowly stir in almond milk one tablespoon at a time until you get a thick dough. Place in the fridge to chill.
Once chilled, remove from the fridge and form into 8 balls and place on wax paper. Pour the shredded coconut onto a plate, then roll each ball in the coconut chia seed mixture until completely covered. Place in the fridge to chill for at least 30-60 minutes. Then eat up!
