Magical Vanilla Pistachio Protein Truffles

Pistachios and chocolate are two of my very favorite things.

So when I wanted to eat an entire box of Moonstruck chocolates the other day, I decided to combine these ingredients instead in a healthier, much more filling treat. And the result was nothing short of magical.

Try out the recipe whenever you have a sweet tooth or want to impress your friends. They’re super easy to make, and taste way less healthy than they actually are!

Here’s the Magical Vanilla Pistachio Protein Truffles recipe:

Ingredients

2/3 cup oat flour (just blend some oats to make your own)
1/2 cup vanilla whey protein powder
1/4 cup unsweetened almond milk
2 Tbsp coconut flour
2 Tbsp maple syrup or honey
1/2 tsp vanilla extract
About 1/4 bar dark chocolate (I used 85%)
5 pistachios (or 1/2 Tbsp), finely chopped

Total prep time: 15 minutes

Directions

Combine the oat flour, protein powder, almond milk, coconut flour, maple syrup, and vanilla extract in a bowl.

Mix everything together really well, then form into six round balls using your hands to roll them together. Place on wax paper then chill in the refrigerator for at least 30-60 minutes.

While the dough is chilling, chop the pistachios and melt the chocolate in the microwave or on the stovetop, being careful not to burn it. Remove the dough from the fridge, then one at a time, coat the truffles in chocolate, then generously sprinkle with pistachios.

Place back in the fridge to chill, then eat up!
