Banana Chocolate Chip Protein Muffin Recipe

Apparently I’m on a chocolate chip kick lately.

But chocolate is just so, well amazing! And luckily it has some health benefits as well, so as long as you’re eating plenty of other high nutrition foods as well, it’s a perfectly healthy addition to your diet.

These high protein banana muffins have just the perfect amount of sweetness with added chocolate chips, and are packed with protein to actually keep you full for more than a half an hour. Make a batch and eat them for breakfast and snacks throughout the week!

Here’s your Banana Chocolate Chip Muffin Recipe:

Ingredients

1 cup oats
1 large ripe banana (about 3/4 cup mashed)
1/2 cup vanilla whey or pea protein powder
1 egg*
1/4 cup almond milk
2 Tbsp cottage cheese**
2 Tbsp mini chocolate chips
1 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp baking powder
1/4 tsp salt
2-3 dates, pitted

*VEGAN: 1 flax egg = 1 Tbs ground flax + 3 Tbs water
**VEGAN: Add additional banana instead of cottage cheese

Directions

Heat your oven to 350° Fahrenheit. Blend together all of the ingredients but the chocolate chips until there are no remaining chunks. Stir in the chocolate chips, then pour into 9 silicon baking cups (these ones are my favorite) and pop into the oven.

Bake for about 35 minutes or until slightly browned on top. Enjoy!
