Chocolate Drizzled Pistachio Protein Bars

Pistachios and chocolate!

I know, big surprise. Like chocolate isn’t good with just about everything.

Yet these chocolate drizzled pistachio protein bars are slightly salty, slightly sweet, and 100% delicious. They have a good enough amount of both protein and healthy fats to both fill you up and satisfy your sweet tooth, always a bonus in my book.

Here’s your Chocolate Drizzled Pistachio Protein bar recipe:

Ingredients

3/4 cup millet puffs or puffed rice cereal
1/2 cup old fashioned oats
1/4 cup vanilla or cinnamon whey protein powder
1/4 cup almond butter
3 Tbsp unsweetened almond milk
2 Tbsp pistachios, chopped
1 Tbsp honey
Pinch of sea salt
3 squares dark chocolate

Directions

Stir together the millet or puffs, oats, and protein powder in a medium sized bowl. Add in the almond butter, honey, and almond milk, then stir in about 2/3 of the chopped pistachios and mix well.

Next, spray a sheet of wax paper with coconut oil and form four bars. You can chill the dough slightly beforehand if you want to make it easier to work with, otherwise just fold the wax paper over the bars to help flatten them.

Melt your chocolate, then drizzle equally over each bar. Immediately sprinkle on the remaining pistachios and sea salt and use your fingers to press any loose pieces onto the bars.

Place in the fridge and chill for at least an hour. Eat up!

Store in the fridge or freezer.
