Mini Vegan Banana Coconut Cookies

There really is such a thing as healthy cookies!

These bite-sized cookies are made from healthy ingredients like oats, bananas, and pea protein powder, and when you use dairy-free chocolate chips they’re 100% vegan.

I love them best warmed up and dipped in coconut or almond milk, but you can also bring them with you as a snack to have throughout the day.

Here’s your Vegan Coconut Banana Cookie Recipe:

Ingredients

1 medium ripe banana
1 scoop vegan pea protein powder (or vegan mix)
1 cup quick cooking oats
1/4 cup unsweetened almond milk
2 Tbsp unsweetened shredded coconut
1 Tbsp chocolate chips
1 tsp cinnamon
1 tsp vanilla extract

Total prep time: 10 minutes
Total baking time: 20 minutes

Directions

Preheat your oven to 325° F. Add the banana, protein powder, and oats to a medium sized bowl and mash it all together. Slowly add the almond milk and stir until there are no remaining chunks.

Add the cinnamon and vanilla extract, and stir well. Next, stir in the shredded coconut and chocolate chips.

Use a cookie scoop to scoop cookies onto a cookie sheet (I used a Silpat so they wouldn’t stick, but if you don’t have one make sure and spray the pan beforehand), then place in the oven and bake for about 20 minutes or until slightly browned on top.

Makes approximately 22 mini cookies.

  2. What a fantastic treat, so healthy. I am a strength and conditioning coach and nutritionist so this will be one I can share with my clients. I am not vegan and workout 4 to 5 days a week so I will add my whey protein in place of the vegan pea in order to get my needed protein for muscle gains! Thank you for posting this, love it!!!
