Healthy Coconut Chocolate Chip Cookie Recipe

healthy chocolate chip cookies

The other day I decided I wanted a cookie that was still pretty healthy yet was a little more like a “real” chocolate chip cookie—a.k.a. one not only centered around protein.

Inspired by a healthy breakfast cookie recipe my sister sent me (I’d link to it but can’t figure out where it actually came from), I whipped together a batch of cookies using whole wheat flour and protein powder, but was a little disappointed in the first batch. They turned out ok, but a little too dry—so for the next batch I added some unsweetened coconut and more peanut butter, and that did the trick!

Vanilla Spiced Peach Protein Muffin Recipe

peach protein muffins

In case you couldn’t tell, I’ve been on a bit of a muffin kick lately.

Ever since I realized after gaining the freshman 15 in college that regular muffins are no better for you than eating a slice of cake (especially the giant Costco ones), I’ve pretty much avoided ever eating them just in case I let myself get too used to including them in my regular coffee order.

So when I realized that it’s actually possible to make muffins healthy, you can imagine I was pretty excited about it. After all, muffins are great to grab when you’re in a hurry or need a quick breakfast or snack option—and since these ones use fresh, in season peaches, are packed with protein and will actually fill you up, you can actually feel good about eating them.

Out of This World Peanut Butter Protein Bar Recipe

Peanut butter and chocolate are two of my very favorite things in the world.

So I couldn’t really believe it when I realized I’d never tried to combine the two into a protein bar. I mean, what an obvious, delicious combination!

I decided to remedy that the other day by putting together these peanut butter protein bars. And boy, did they turn out to be out of this world! Packed with protein, peanut butter, and mouthwatering dark chocolate, these bars pretty much taste like dessert, but they’re actually good for you.

Dark Chocolate Covered Strawberry Protein Bites Recipe

Sometimes, you just need something that’s easy to make, satisfying, and looks (and tastes) about as close to a “real” treat as possible.

I was having one of those days recently. I had a massive sweet tooth, but really wanted to eat something healthier than the actual chocolate truffles lurking in my treat cupboard (yes, I have a treat cupboard. It’s always overflowing with protein bars and chocolate and other goodness).

I was also feeling pretty lazy, and didn’t want to make some big production or overly mess up my kitchen. So I looked in the fridge, and there were some strawberries waiting to be eaten. I thought… what if I put these in a protein bite? And that’s how these protein bites were made.

Give them a shot! You can also substitute the fruit for whatever you like—I’d imagine blueberries or raspberries would be especially delicious as well.

Raspberry High Protein Muffin Recipe

The other day I had a huge craving for muffins. Yet I wasn’t about to go to a bakery and buy one full of sugar and flour—I wanted to make my own.

I thought about making these apple cinnamon protein muffins, but since it’s not exactly apple season, I decided to branch out and try making some blueberry ones.

But when I went to the store to try and buy some blueberries, they were completely out! That’s when I saw the raspberries (on sale, thanks Safeway), and an idea popped into my head: how about raspberry protein muffins?

So, I bought some raspberries and put together these muffins. They turned out INCREDIBLE!

Slightly sweet, wonderfully tender, and bursting with flavor, they’re all I’ve ever wanted in a muffin and more. Plus, they’re packed with protein and healthy ingredients to keep you full and satisfied whether you eat them for breakfast, as a pre-workout snack, or anytime of the day.

I can’t really think of anything I like better than chocolate, cheesecake, and coffee.

Naked Chocolate Chip and Oatmeal Protein Bar Recipe

As much as I love to cook (because I love to eat…), sometimes I get lazy in the kitchen.

Even though I may want to eat peanut butter protein balls or chocolate covered raspberry coconut protein bars, I just don’t always feel like going through the whole ordeal of mixing everything together, then getting melted chocolate all over the place because there is just pretty much no way not to make a mess when melting chocolate.

That’s why I decided I needed an easy, no-bake, no-chocolate coated yet high protein recipe I could just toss together the night before and not have to do anything extra complicated afterwards. Viola! This naked chocolate chip and oatmeal protein bar recipe was born.

It’s easy to make, tastes awesome, and you can throw it together quickly the night before a flight, a hiking trip, a trip to the beach, or wherever. And since there’s no chocolate coating, it won’t drench your kitchen in chocolate.

Sound good? Here’s the recipe:

The Easiest 5 Ingredient Healthy Cookie Recipe Ever

I don’t know about you, but sometimes I just feel too lazy to cook. Whether I’ve just made a lot of home cooked meals recently or just don’t feel like doing the dishes, this cooking laziness happens on a semi-regular basis.

And that wouldn’t necessarily be a problem—except that I’ve noticed that the lazier I get when it comes to cooking, the less healthy I eat.

So to try and combat that unhealthy eating pattern, I decided to put together some incredibly easy, totally excuse-free healthy cookies. These cookies are so easy to make, you can’t even pretend to be too lazy to make them. Plus, they have absolutely zero added sweeteners and can be made with ingredients almost everyone has just sitting around in their kitchen.

Since I made these for the first time, I’ve made multiple batches—I love them as pre-workout snack or to just throw a couple in my purse for healthy snacking while I’m away from home. Try them, you won’t be sorry!

Energizing Quinoa Protein Bites

When I set out to make this recipe, I’d originally planned on making protein bars, not bites. I wanted to make something using quinoa, because not only is it a great source of energy, it also contains more protein than most other grains and carbohydrates (and, also, I’d just made a bunch and wanted to use it up).

But, unsurprisingly, the quinoa ended up making bars that were really crumbly, so I decided to improvise and make them bite-sized instead. They turned out awesome! Not too sweet, with just the right amount of coconut, cherries and, of course, chocolate. They’re perfect for a pre-workout meal or a snack to energize you any time of the day.

Also, they’re really easy to make, so don’t get intimidated by the ingredient list. You can also improvise and the recipe to your heart’s content depending on what you’re craving and what you have on hand when you’re making them.
